Breakfast…
I love overnight oats. I really love them. But you know what I love probably just as much? All the ingredients for overnight oats put together in the morning and eaten straight away. The oats don’t get as soft and ‘porridgey’ obviously but it’s like a rich and yet refreshing kind of crunchy breakfast and I’m really loving it lately!
After breakfast it was off to work early because I had to make a quick pit stop at our real estate agent’s office. Oh, did I not mention that we’re moving?? I’ll fill you all in on that little chestnut tomorrow!
My work day was pretty uneventful except for some more time spent at the beach. I am kind of addicted to my walks to the beach at work lately. I am so excited when I ask my littlest buddy what he wants to do and he says “Go Baker beach!”. Brainwashing?? Possibly, but it’s worth it!
I had a couple of snack attacks at work. On Maureen’s Magic cookies of course! I foresee another batch of these being made very soon, like as soon as I hit ‘publish’ on this post.
Lunch…
Salad’s have pretty much been making my day lately. Remember when I shocked myself by actually craving a salad for lunch? Well, ever since I have been seriously loving them! I still like my salads with a bit of something-something in them. Today it was deli ham!
Sorry for the blurriness! I was shaking with excitement.
In this beauty – mixed spring greens, chopped baby carrots, pinto beans, deli ham, parmesan cheese and olive oil as a dressing. Ohhhh yum.
My favourite thing is when everything is gone except some parmesan shavings and olive oil. That is the goods.
This was a tasty way to end my work day and I am proud of myself for packing my lunch every day this week so far! Hooray!!

Workout…
When I got home from work, I was feeling indecisive about what to do for my workout but I knew I wanted to do something to get my sweat on. I read a great quote by the ever wise Skinny Runner yesterday “If you need to take a rest day, take a rest day. Otherwise, make the time, get your rear in gear, and go sweat“. Oh the wisdom!
I took a peek at the class list at my gym and saw that (shockingly) the 5:30 spin class wasn’t full! I immediately reserved a place, got changed and headed off!
It’s been a long time since I did a spin class, like a reaaaaaallly long time! I was excited because I had forgotten how insanely tough it is.
Sweat. Oh so much sweat. Sweat everywhere! I was even sweating from my eyeballs. Oh no, you’re right…those were tears. I remember why I thought it wasn’t that hard when I first started, I totally used to cheat!! I was that person who would pretend to turn up my resistance when I was struggling. Today, every time the instructor said to ‘turn a quarter turn to the right’ I did it. Oh man!
I finished up feeling very jelly legged and sweating like a mess, but awesome! I really liked it and really liked the challenge.
And then I collapsed into my car.
And now it’s time to wash my sweaty self and think of something for dinner in the approximate 2 minutes before Chris gets home from work.
