Maureen’s Magic Cookies!

Good morning loves, do I have a treat for you!

Yesterday as I was leaving the gym, I got a text message from my gorgeous sister-in-law saying she’d just tried out a delicious, easy and healthy cookie recipe and decided to share it with me!

She’s the best!

The best thing about these cookies?

They can be made with three ingredients.  Yup…three!

The goods.

The goods.

When I mixed up my batter with my three ingredients, I felt like it was just a tad dry for my liking (Maureen made them successfully with just these three and said they were awesome!).  To make them a bit more to my liking, I added in a little unsweetened apple sauce to the mix.

Mmmm apple sauce!

Mmmm apple sauce!

I don’t know about you but I could eat straight apple sauce until the cows come home! When Chris and I have kids, they will may have to fight me for it.

I added the apple sauce, oats…

Oats!

Oats!

and the mashed banana in a mixing bowl.

Mash em up!

Mash em up!

(I like to mash the banana in the skin first, less mess!).  And then added in the chocolate chips and got it all mixed up!

Mixed!

Mixed!

The consistency of these cookies is not the same as your run of the mill cookie.  They seem like they’re a little too not-going-to-stick-togetherey but don’t worry, they will!

I then popped them on a foil lined baking tray that I sprayed with a little cooking spray.  I decided on tablespoon sized cookies.

Ready for the oven!

Ready for the oven!

These little babies will stay the way you place them on the tray so if you want flatter, wider cookies, give them a little smush before they go in.  I wanted to keep mine more like little cookie ‘bites’.

15 minutes in the oven and these goodies were good to go!

Baked up!

Baked up!

Seriously…does it get any easier than that?? Three (or 4) ingredients, 15 minutes in the oven and BAM healthy, delicious snacks.
